Cauliflower Breakfast Casserole

Do you ever have days, where you just want to have breakfast for dinner?! We do over here ALL THE TIME!!! Instead of making a dish that isn’t that great for you, try this one on for size. If you love yourself enough to fuel your body the right way, sometimes dinner may take a tiny bit more. This dish however, has the taste of hard work yet the prep of a simple meal. Most of your time will be spent enjoying a good book, playing with your kids, or watching a favorite movie, while waiting for the time to go off saying it is done. Through some super quick and delicious broccoli on the side, and you got one of the best dishes out there!

Cauliflower Breakfast Casserole

Yields: 4 servings

Ingredients

8oz turkey breakfast sausage, cooked

1/8 cup onion, chopped

1 cup cauliflower florets

dash of salt and black pepper

1 cup fiesta blend cheese

4 eggs

8oz egg whites or egg beaters

1/8 cup unsweetened almond milk

Directions

Preheat oven to 350 degrees. Lightly spray a 9 x 13 inch baking dish with cooking spray. In a large skillet over medium high heat, brown turkey sausage. Add cauliflower and onions; sauté until caramelized. Season with salt and pepper or seasonings of your choice. Spread sausage and cauliflower mixture in prepared baking dish.

Sprinkle 1/2 cup of shredded cheese on top of sausage and cauliflower.


In a large bowl, whisk eggs, egg whites and unsweetened almond milk together. Pour egg mixture over sausage, cauliflower, bacon, and cheese. Sprinkle remaining 1/2 cup of cheese on top. Bake for 40 to 45 min or until eggs are set.

Add 1 cup of veggies to have on the side (Tuscan seasoned broccoli in the picture). Enjoy!
