Fish Tacos

Have you ever heard of Meatless Monday? Taco Tuesday? Pizza Friday? Well, there was time a time in the Osborn household where I actually used to follow these sayings for my weekly meal planning. It wasn’t until recently that I thought I just might make it a thing again! This fish taco recipe is easy, delicious, and so healthy for you!!! Tuesdays are pretty hectic in our house, and I can’t say no to a meal that bakes in 20 minutes and is on the table and ready to go in 25. You can’t even tell you’re eating fish! I tastes that good!!! Try it out for yourself.

Ingredients:

20 oz raw tilapia ~ should yield 14 oz cooked

3/4 tsp salt

1/4 tsp black pepper

1/2 tsp ground cumin

1/2 tsp chili powder

3.12 oz. (6 leaves) of romaine lettuce

Toppings:

2 tsp lime juice

4 tbsp approved dressing of choice

1/4 cup garden fresh chopped tomatoes

3 oz avocado or you can use 4 tbsp sour cream

 Directions:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Sprinkle salt, pepper, cumin and chili powder on both sides of tilapia. Bake for 20 to 25 min or until done.

 Place each 7 oz portion of cooked fish on romaine lettuce to hold the fish. Drizzle each portion with 1 tsp lime juice and 2 tbsp of dressing. Then add your choice of 1.5 oz avocado or 2 tbsp sour cream per serving. Enjoy!

I love that the program I coach for has taught me what macros to pair with what foods. Tilapia is one of the leanest meats you can consume, so adding some healthy fat is good for you and makes it taste that much better! Don’t be afraid to tell me how you liked it! Happy Taco Tuesday!!!
